5 Plant-Based Laksa Recipes
It's still rare to go to a restaurant and find a plant-based version of laksa. However, there are plenty of recipes online that help you continue to include a delicious bowl of laksa.
Below are five plant-based laksa recipes that I would like to try:
1) Malaysian-spiced noodles with tofu by Simon Rimmer
Rimmer's recipe switches the traditional shrimp paste with a vegetable mixture, and a vegetable broth and coconut concoction. Rimmer chooses tofu as the protein option.

2) Malaysian Butternut Squash Laksa by Maikki Vasala
Vasala's recipe differs because of its inclusion of butternut squash into the mix. Vasala says that the squash makes the dish "ideal for cold days."

3) Vegan Laksa - Malaysian Curry Laksa Soup by Richa Hingle
Hingle's recipe is unique because of the addition of cashew nuts into the paste mixture. By adding the cashews into the paste, the sauce becomes creamier and thicker.

Anu's laksa recipe similarly includes cashews to create a creamy base. What I like about this recipe is that it includes details of creating the crispy tofu, rather than just focusing on the paste and broth.
