Plant-Based Sambal Recipe

Sambal is an amazing chili sauce or paste condiment, that adds a spicy kick to most Malaysian dishes. It's spicy yet sour attributes, enhance a meal's flavor. Unfortunately, most sambal includes shrimp or shrimp paste.

However, plant-based sambal does exist! And it still carries the spicy and sour tastes of a regular sambal mix.

Below is my mom's recipe for a delicious, spicy, plant-based sambal:

Ingredients: 
2 Large Tomatoes
1 White Onion
1 Red Onion
5 Red Chilies
1 Tablespoon of Tamarind 
1 Teaspoon of Sugar
1 Teaspoon of Salt
1/2 a Teaspoon of Cooking Oil
Pepper to taste


What You'll Need:
- A saucepan
- Chopping board
- Knife
- Blender, Food Processor, or Mortar and Pestle

Step 1: Roughly chop the chilies, onions, and tomatoes. It doesn't really matter how you cut them because they will all go into a blender at the end.

Step 2: In a saucepan add 1/2 a teaspoon of cooking oil and cook over medium heat.

Step 3: Add the chopped onions, tomatoes, and chilies. Sautée until the tomatoes begin to soften and the onions begin to become slightly transparent.

Step 4: Add the tamarind, salt, sugar, and pepper.

Step 5: Stir well for about 30 seconds to a minute, or until everything begins to soften.

Step 6: Remove the pan from the stove and carefully place the mixture into the blender, food processor, or mortar and pestle. If you choose to use the food processor or blender, add 1 tablespoon of water into the mixture. 

Step 7: Blend until the mixture turns into a paste-like consistency.

This sambal mixture is perfect for dipping cucumbers into, a side condiment to a meal, or an added-on flavor base for frying rice or vegetables.
